Hello!

Napa cabbage prices have suddenly skyrocketed, and it's challenging to source it in large quantities.

Considering the cost of cabbage, chilli powder, and labour, buying kimchi might be the smarter choice in times like this!

After all, kimchi is precious to us. Even with the best kimchi imported from Korea, it takes a month to arrive, and despite efforts to maintain freshness, the seasoning can mature over time, which has always been a dilemma.

So, here’s our plan:

  • Import during Korea's kimchi season when napa cabbage is at its best.
  • Produce locally in Australia during the summer to avoid overly fermented kimchi.

This way, we can enjoy fresh, seasonal kimchi all year round!

Honestly, while I’d love to make kimchi myself, I believe it’s best to leave it to the experts!

After meetings, discussions, sampling, and a long process since last year, we are now able to offer napa cabbage kimchi and young radish kimchi as the first releases through Jessica Market’s OEM production.

Going forward, to maintain maximum freshness, we’ll implement a strict pre-order system, producing only upon order each month.

The process will be:
Pre-order > Production > Pick-up and Delivery > Sold Out

This way, we aim to keep delivering the freshest, unfermented kimchi!

I may not make kimchi myself, but you know how many kinds I’ve tasted, right? I know good flavour! Trust me, it’s truly delicious - give it a try!

This delicious kimchi is made by a kimchi master using fresh, locally grown vegetables here in Australia. And rest assured, it's produced in a fully-equipped, certified food facility - no need to worry about it being made in someone's kitchen! 😊

Just one bite, and it instantly brings to mind a bowl of white rice or a plate of Bossam (Korean Boiled Pork)

- that’s the taste!

I served fresh kimchi at dinner without telling my husband it was store-bought tonight 😏

He said "This kimchi is so good" (with 100% suspicious eyes) "Did you make it? It’s not too salty, just nicely mild. Let me have some more!"

For those who love fresh kimchi,

this week is a must-try!!

As you can see, the young radish is as fresh as it gets.

I chose this company’s kimchi because of their spotless facilities and the perfect Seoul-style flavour - mild and not overly salty. While some might prefer saltier, seafood-based kimchi, our kids eat a lot of kimchi, so the Seoul-style suits us best.

It even tastes great as it ripens!

.

Right now, the young radish has that fresh, crisp taste, so I’ve set mine aside to let it ripen a bit. Young radish kimchi is best when it's slightly fermented and mixed with rice, don’t you think?

For those who love fresh kimchi, I highly recommend it!
